Executive Chef Omar

Meet Firefly’s New Executive Chef, Omar Armas!

Chef Armas has arrived in San Diego, and he’s ready to mix things up. Refreshed Firefly menus, featuring interactive, family-style plates — coming very soon!

Let’s meet our talented new Executive Chef, Omar Armas!

Born in San Diego, Chef Omar moved to Ensenada, Mexico as a child, where he continued to live up until his college years. For school, he located back to San Diego and began working as a dishwasher in Coronado. Just two years later, he had taken over the entire kitchen! This is where his love for cooking and dreams of becoming a chef originated. Soon after, he took his talents to culinary school in Florence, Italy, where he graduated with honors.

Global experience and years of expertise

Chef Omar brings 17 years of culinary expertise to the kitchen of Firefly Eatery & Bar. His passion for cooking, combined with his love of travel, has led him to work for restaurants in Tijuana, Italy, Brazil, Quintana Roo, China, Mexico City, and Spain. His resume includes a Michelin-starred restaurant, several S. Pellegrino World’s 50 Best Restaurants recipients, and experience as a private chef. Currently, he is also the owner of Caliche Taqueria and Malia Brewery, both in Ensenada.

Chef Armas’ vision for Firefly Eatery & Bar

Although Chef Omar has lived and worked all over the globe, his path keeps bringing him back to San Diego. As Firefly’s new Executive Chef, he is ready to bring a fun, coastal California menu with a Baja influence to the table. Although his vision for the restaurant focuses on the addition of many sharable, family-style dishes, he plans to keep the element of fine-dining included. He says that while he doesn’t see this style of service in San Diego often, it’s extremely popular within Valle de Guadalupe, Mexico’s wine country.

Additionally, Chef Omar will introduce more vegetarian and vegan options to the menu with more locally-sourced ingredients than ever before. He plans to work closely with producers right here in San Diego, to fully capture the bright, seasonal tastes of Southern California.

To Chef Omar, presentation is just as significant as flavor.

“Initially, you eat with your eyes. The first impression is the most important. It’s like love at first sight.”
